Vegan Irish Potato Bread with grilled tomatoes

Irish Potato Bread

Ingredients
  

  • 400g/ 14oz Potatoes (peeled)
  • 85g/ 3oz Plain Flour
  • 56g/ 2oz Vegan butter
  • salt and pepper

Instructions
 

  • Chop the potatoes into cubes and put in a saucepan. Cover with boiling salted water. Cook until tender.
  • Drain the potatoes and place the saucepan back over a low heat for a few minutes to dry them out.
  • Remove from heat, add vegan butter and mash until smooth
  • Add salt and pepper to taste
  • Add most of the flour. The amount of flour needed will depend on how much moisture are in the potatoes. You may need to add more or less as needed.
  • The dough should be firm, coming away from the sides of the pan and be able to hold it`s shape but not too dry
  • Tip out onto worktop. Pat out to 1/2 cm or 1/4 inch thick. Cut into rounds with a cookie cutter or just into squares with a knife
  • Warm up a frying pan and cook them on a medium heat for 3-4 minutes until each side. They should be nicely browned on both sides
