Vegan Apricot Crumble Bars
These Vegan Apricot Crumble Bars are buttery, crisp, sweet and full of gooey, sweet apricot filling. Easy to make and incredibly moreish. You don’t need any fancy ingredients or equipment to make these and they’re easy to throw together!

Base
- 120 grams Vegan Butter (softened)
- 100 grams Caster Sugar
- 150 grams Plain Flour
- ¼ Teaspoon Salt
Crumble Topping
- 50 grams Plain flour
- 50 grams Brown Sugar
- 45 grams Vegan Butter (chilled)
- 300 grams Apricot Jam
- 1 Tablespoon Icing Sugar (optional)
Preheat oven to 180°C/350°F/Gas Mark 4. Line a 20cm square tin with baking parchment.
For base: cream together softened butter and sugar. Add dry ingredients to make a stiff dough. Spread in tin and bake for 20 minutes.
For crumble topping: mix together flour and sugar. Cut in butter with the back of a fork or a pastry cutter until coarse and crumbly.
Spread the base with the apricot jam
Sprinkle on the crumble topping and bake for 20 minutes until lightly browned.
Let cool for 30 minutes then dust with icing sugar and cut into bars.
