Vegan Apricot Crumble Bars

These Vegan Apricot Crumble Bars are buttery, crisp, sweet and full of gooey, sweet apricot filling. Easy to make and incredibly moreish. You don’t need any fancy ingredients or equipment to make these and they’re easy to throw together!

These fruit bars have 3 layers including a shortbread crust, fruit layer, and a crumble topping.

The great thing about these is they are so easy to make and require minimal ingredients. The base is a classic shortbread type base with flour, vegan butter and sugar that is then baked.

Once the base has cooked for around ten minutes spread over the apricot jam and then top it with the crumble that is just vegan butter, brown sugar and flour.

Ingredient notes

Here is what you need to make these Vegan Apricot Crumble Bars:

  • Plain Flour – also known as all-purpose flour in the US.
  • Granulated sugar – I love to use golden caster sugar but regular white granulated sugar can also be used.
  • Vegan butter – Use a block butter as it needs to be chilled for the crumble topping.
  • Salt – I recommend you add a ¼ teaspoon of fine salt just to balance the sweetness.
  • Apricot jam – store-bought or homemade can be used. You can also use different flavors of fruit jam for your crumble bars.

 

Make these strawberry crumble bars in a few easy steps!

1) In a large mixing bowl add the softened vegan butter and sugar. Mix until well combined.

2) Mix the flour and salt into the butter and sugar until it forms a stiff dough.

3) Transfer the dough into the lined pan and firmly press it in to form the base.

4) Bake for 20 minutes.

5) While the base is cooking make a crumble with the chilled vegan butter, flour and sugar.

6) Pour the jam over the base and spread it out evenly using a spatula or spoon. Sprinkle over the remaining crumble. Bake for 20 minutes.

7) Let cool for 30 minutes, dust with icing sugar if desired. Slice into bars and enjoy!

 

Tips for success

Make sure the vegan butter for the base is soft and at room temperature before starting.

The vegan butter for the crumble topping should be chilled. This makes it easier to blend into the dry ingredients to make a crumbly topping..

Leave a small gap around the edges between the jam and the edges of the base. This stops the jam leaking out.

 

 Storage Instructions

Store in an airtight container, at room temperature or refrigerated, for 5 days.

You can easily freeze these Vegan Apricot Crumble Bars by allowing them to cool completely, cutting them into bars, placing them in a freezer-friendly container then freezing them for up to 3 months.

Defrost the crumble bars in the refrigerator or at room temperature until thawed or heat them in the microwave or oven.

Ingredients
  

Base

  • 120 grams Vegan Butter (softened)
  • 100 grams Caster Sugar
  • 150 grams Plain Flour
  • ¼ Teaspoon  Salt

Crumble Topping

  • 50 grams Plain flour
  • 50 grams Brown Sugar
  • 45 grams Vegan Butter (chilled)
  • 300 grams Apricot Jam
  • 1 Tablespoon Icing Sugar (optional)

Instructions
 

  • Preheat oven to 180°C/350°F/Gas Mark 4. Line a 20cm square tin with baking parchment.
  • For base: cream together softened butter and sugar. Add dry ingredients to make a stiff dough. Spread in tin and bake for 20 minutes.
  • For crumble topping: mix together flour and sugar. Cut in butter with the back of a fork or a pastry cutter until coarse and crumbly.
  • Spread the base with the apricot jam
  • Sprinkle on the crumble topping and bake for 20 minutes until lightly browned.
  • Let cool for 30 minutes then dust with icing sugar and cut into bars.
