Vegan Strawberry and Cream Slices

Vegan strawberry and cream slices just scream summer!  A few ingredients are all you need to make these glorious crisp pastries, filled with cream, jam and fresh strawberries.

 

I live in Co. Wexford in Ireland which is famous for growing strawberries so my summers from ages eight to eighteen meant strawberry picking which was hard work but great fun too as all my cousins and friends was there too.

I never made much money and my hands would be stained red for weeks but those strawberries tasted divine, strawberries are often tasteless now as they are grown faster and in tunnels instead of fields and being allowed to sun ripen naturally.

 

 

Strawberries and cream are a classic combination which is totally delicious!

It always reminds me of the Strawberry Fair which is held every year in Enniscorthy. We used to go every evening and even though I had been eating strawberries all day I couldn’t resist buying a tub of strawberries topped with a big dollop of cream and a sprinkle of sugar, it was heaven!

Becoming vegan means I haven’t had strawberries and cream in years but my local supermarket started selling vegan Double Cream so strawberries and cream was my first thought!

 

These Vegan Strawberry and Cream Slices contain fresh berries along with a delicious whipped cream filling, strawberry jam and layers of delicate puff pastry which tastes truly divine. They’re divine to bite into as the pastry is crispy and flaky and the filling is soft and creamy.

Ingredients you’ll need to make this dessert:

Puff pastry: I always buy pre-made puff pastry as it’s a lot of work to make and takes a lot of time. Pre-made and rolled is quick and easy to use so you can whip up these gorgeous slices in a very short time. Many brands are vegan and its inexpensive to buy.

Fresh strawberries: Summer which means strawberries are in season. They are sold everywhere here at roadside stands. For this recipe, you’ll want to remove the stalk and thinly slice the strawberries. Place them on some kitchen paper to remove any excess moisture. Too much moisture will make the pastry soggy, and could melt the cream.

Strawberry jam: Spread strawberry jam over the pastry before piping on the cream. It is a step you don’t want to miss. It adds so much flavour to the overall dessert.

Whipped cream: You’ll want a dairy free double cream which is thick and will hold it’s shape for this dessert.

Icing Sugar: Finish off the pastries with a dusting of icing sugar. It adds extra sweetness and makes the dessert look gorgeous!

 

How to make strawberries and cream puff pastries?

This recipe couldn’t be easier, with only a few steps and just four ingredients.

● Cut the puff pastry into rectangular shapes and place on a baking tray lined with greaseproof paper. Brush the pastry with dairy-free milk and sprinkle over some caster sugar. This is optional but helps the pastry turn a gorgeous golden brown.

● Bake in the oven for 8-10 minutes until golden then remove and allow to cool before filling.

● Whip up the dairy-free cream, transfer into a piping bag.

● Remove the strawberry stalks and cut them into thin slices.

● Slice the pastries in half, spread some strawberry jam over the pastry, pipe on some of the cream.

● Lay on some strawberry slices.

● Place the other half of the pastry on top.

● Finish with a generous dusting of icing sugar. Serve and enjoy.

 

Notes:

The pastries can stand at room temperature if the room is cool, but if warm, the cream will melt making for soggy pastry. Keep them chilled then serve.

 

As these pastries contain whipped cream and fresh fruit, they are best made and enjoyed the day of making.

Ingredients
  

  • 320g  Puff Pastry Roll
  • 180ml Dairy Free Double Cream
  • 1 Fresh Strawberries 
  • 200g Strawberry Jam
  • 2 Tablespoons Dairy Free Milk
  • 1 Tablespoon Sugar

Instructions
 

  • Preheat oven to 200°C/400°F/Gas Mark 6 and line 2 baking trays with greaseproof paper.
  • Unroll the sheets of puff pastry, slice into eight rectangles. Place onto a lined baking trays. Spread them out as the pastry will puff up.
  • Brush the pastries with dairy-free milk and sprinkle over some caster sugar. This is optional but helps the pastry turn a gorgeous golden brown.
  • Place into the middle of the oven and bake for 10 - 15 minutes until golden in colour. Once ready, remove the tray from the oven. Allow the pastries to cool on the tray before transferring them onto a cooling track to cool fully before filling.
  • Place the dairy-free whipping cream into a bowl and whip up until thick. I use a hand mixer with balloon whisk attachment. You can use a hand whisk but it will take longer. Transfer the cream into a piping bag
  • Cut the strawberries into thin slices, then place onto some kitchen paper to soak up any excess moisture.
  • Slice the pastries in half horizontally. Spread some strawberry jam over one half of the pastries.
  • Pipe cream on top of the jam, then lay on some strawberry slices.
  • Place the other half of the pastry rectangle on top.
  • Dust the pastries with a generous dusting of icing sugar. Serve and enjoy.
