Vegan Granola Parfait

Vegan Granola Parfait will be your new favorite treat for breakfast, snack or dessert. Fresh fruit and crunchy granola are layered with dairy-free yogurt. Ready in only five minutes and really pretty, this recipe is perfect for the whole family.

Sweetened only with the fruit, Vegan Granola Parfait is a healthy and delicious breakfast. 

What is a Parfait?

A parfait is an originally French dessert that consists of layers of custard and fruit. It’s often served in a tall glass with a long spoon.

Parfaits have adapted to include ice cream, whipped cream or yogurt which are layered with fruit and other foods such as granola.

I love the combination of fruit, vegan mango yogurt and granola, but get creative and use whatever you like!

 

Instead of granola you could also use broken up cookies or cake or granola bars. I used vegan mango yogurt but you can use any flavour of yogurt you prefer.

 

Parfaits are really easy to make, especially if you utilize seasonal fruit. I used blueberries,  raspberry and kiwi but use whatever fruit that is in season. Summer is berry season but in autumn fruit like plums, pears and cherries would be delicious. The possibilities are endless!

Homemade Vegan Granola Parfait

If you’ve never made homemade granola, you are in for a treat.

Homemade granola is so much healthier than what you buy because you control exactly what is going into the recipe. I always like to make extra because granola gets eaten quickly around here. Try my recipe for Healthy Granola.

Ingredients 

  • Vegan yogurt — this layer of creaminess is necessary for any good parfait. I used mango but use any flavour you like or plain if you prefer.
  • Vegan Granola — essential to add that lovely crunch! Use my Healthy Granola recipe, it’s perfect for this recipe
  • Fresh fruit — choose your favorite seasonal fruit. I used blueberries, raspberries and kiwi. You can also use blackberries, black raspberries, tangerine wedges, and whole strawberries.

There are a lot of options when it comes to the individual components of your vegan granola parfait.

It’s hard to be exact in recipe amounts as it really depends on the size of your glass and the size of your fruit. The amounts I have listed may be too much for your glass size but you can just make another one which is not a bad thing!

Optional add-ins

Coconut cream, crushed nuts and seeds, nut butter, jam, crumbled cookies, vegan cream, or chopped dark chocolate.

Assembling the Vegan Granola Parfaits

These vegan granola parfaits look gorgeous, with only a few minutes of assembly. I like start with granola on the bottom of the glass jar, before topping it with layers of dairy-free yogurt and berries. Layering the vegan granola parfaits like this means that you’ll get a little bit of everything in every single bite. If you’re making ahead of time or packing in a lunchbox, I’d keep the granola separate until ready to eat so It doesn’t get soggy.

 

Step 1: Place some homemade granola in a clear glass.

Step 2: Add in a layer of fruit.

Step 3: Dollop in a layer of dairy free yogurt.

Step 4: Continue this process until you have as many layers as

desired. I like to finish with fruit as it looks so pretty.

Step 5: Serve immediately and enjoy!

 

You can arrange your different layers any way you like, altering between them to create a beautiful color-and-texture experience!

This breakfast granola is best served soon after making it because the crunchy granola will get soggy over time!

Variations

  • Dried fruit: Add some raisins, cranberries, dates, or goji berries for pops of tart and sweet flavor.
  • Crunchy toppings: Want to add another layer of crunch? Try with layers of corn flakes, toasted coconut, cacao nibs, or chocolate chips.
  • Jams, curds and fruit spreads are also great layered in homemade parfaits.
  • Peanut butter or almond butter can be swirled in for added healthy fat and flavor.

Storing

Storing: After assembling your parfaits, close the jars and keep them stored in the refrigerator. If going to store them keep the yogurt layer separate from the granola layer or it will go soggy.  If you’re planning on making these ahead, it’s best to use fruit enclosed in the skin, like raspberries and blueberries, because they won’t have much moisture and make the granola soggy. They are best eaten within a day or two.

Equipment

  • 250ml wide glass

Ingredients
  

  • 75 gm Granola
  • 100 gm Blueberries
  • 100 gm Raspberries
  • 1 Kiwi, peeled and chopped
  • 200 gm Dairy free yogurt

Instructions
 

  • Spoon a third of the granola into the base of a 250ml dessert glass. Top with a third of the blueberries, raspberries and kiwi. Spoon over half of the yogurt. Repeat the layers ending with a layer of fruit on the top.
